This is a real, fully matured rinded Lancashire cheese, made like no other! If you want to try something really special then this one is for you.

Butlers Farmhouse Cheeses named this cheese after a distinctive and steep hill in the village of Inglewhite where, in years gone by, the locals used to trot their horses whilst at the village fair. Grandad Butler would remember it well.

Made with great Lancashire care, these cheeses are wrapped in buttered muslin and matured to develop a natural rind, a traditional method known for contributing flavour and texture to the cheese as it matures. They then take these special cheeses along the lane to Throstle Nest Farm. Here, they have a dedicated rinded maturing barn, and this is where it gets interesting.

Unique to Butler's barns, a variety of natural flora moulds help to develop the cheese’s specific flavour profile and texture. As the moulds grow, they brush the cheeses and turn them regularly so that a natural hard rind forms on the outside, which contributes to the intensity of the flavour.

Trotter Hill has a deep, complex, savoury flavour and a creamy pale yellow colour. The texture is a soft crumble.
