Next Level – Cornish Yarg. Mild and Creamy Cornish Classic famously coated in nettle leaves. 27 cm diameter
Next Level – England’s finest Stilton, Colston Bassett to represent the blues. A fine, full flavoured beauty, this is unbeatable in my opinion! 23 cm diameter
Next Layer – Wensleydale with Cranberries – A sweet and fruity cheese, loved by kids and adults alike. Made by Stephen Greenfield in Inglewhite, this is our biggest selling fruity cheese. 21 cm diameter
Next Layer – Tovey – Handmade in Cumbria by Leonie & Carolyn Fairburn, this is a little truckle of mould-ripened, unpasteurised goats milk cheese, quite tasty without taking the roof of your mouth off! Bear in mind, it’s not veggie though! We can change this cheese if you need it to be suitable for vegetarians. 11 cm diameter
Top Level – a Vintage Cheddar Heart in burgundy wax from the lovely folks at Godminster Cheddar, Somerset. 200 grams

With regards the decorations, I usually go with a mix of whatever is in season, some fruit to enjoy with the cheese and some simply because it looks good! This selection will typically contain red & green grapes, figs, physallis, strawberries, blueberries, raspberries, sharon fruit, lychees and lemon thyme sprigs for decorating together with a packet of pumpkin seeds for drizzling round the base of the cake.
